Stuffed Pepper

This recipe is perfect for two stuffed peppers.


  • Two green bell peppers
  • 1/4 lb of browned/cooked beef/hamburger
  • 1/2 cup cooked white or brown rice
  • 1 8oz can of tomato sauce
  • 1/4 cup chopped scallions
  • 1 tsp italian seasoning
  • 1 tsp chopped rosemary
  • 1tsp chopped parsley
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 teaspoon pepper
  • 1/4 cup of mozzarella cheese

Preheat oven to 400 degrees F. Rinse green bell peppers, cut off the top, an remove seeds/membranes. In a bowl add all other ingredients accept for the cheese, and mix. Place peppers in an oven safe dish, and spoon the misture into the bell peppers, making sure to fill all the way to the top. If you’re feeling really crazy, go ahead and have your pepper overflowing with the wonderful rice and hamburger goodness. When you’re done stuffing your pepper, sprinkle the mozzarella cheese on top, and place your peppers into the oven for about 15-20 minutes or until the top edge of your pepper looks wrinkly and the cheese is brown and bubbly. Take it out of the oven and let it cool for about 5-10 minutes, then you can dig into the amazingly gooey stuffiness that is now stuffed pepper.
